Today’s recipe was another that my family was afraid we would have to give up when going gluten-free. The original recipe called for 1 1/2 cups of stove top chicken flavored stuffing mix, but a little searching and around Thanksgiving time you can find gluten-free stuffing mix like Rudi’s pictured below, at your local health food store (Sprout’s or Whole Foods).If it is not around the holidays however; this stuff can be next to impossible to find, which led me to make my own bread crumbs using gluten-free bread and Italian seasoning.
Simply take 4-6 slices of gluten-free bread and place on a baking sheet. Place in an oven pre-heated to 350 degrees. Bake for 10-12 minutes per side or until golden brown. Once both sides of the bread are browned, break into small pieces and place in a chopper and pulse until the bread is broken down into small crumbs. Add 2 Tablespoons of Italian seasoning and you have your own stuffing to use with the recipe.
What You’ll Need:
1 lb. lean ground turkey
1 1/2 cups bread crumbs
1/2 cup water
1/4 cup ketchup, divided
1 egg, beaten
Pre-heat oven to 375 degrees.
Mix all ingredients except 2 tablespoons ketchup.
Shape meat mixture into oval loaf in 12 x 8 in baking dish, top with remaining 2 tablespoons ketchup.
Bake at 375 degrees for 40- 45 minutes or until center is no longer pink.
I serve this with mashed potatoes and gravy (of course) and don’t have time to whip up turkey gravy from scratch, but was shocked when I read the labels of many pre-made varieties. This one below is gluten-free, organic and Non-GMO so it is a win in my book!
