Why I have not shared this recipe sooner is beyond me. Dylan and I can eat this a couple of times a week and not tire of it. Plus it’s a quick and easy meal to prepare.
What You’ll Need:
¼ cup packed brown sugar
2 tablespoons gluten-free soy sauce (I use Kikkoman)
2 tablespoons hot water
2 tablespoons miso paste (soybean paste)
4 (6 oz.) salmon filets
Pre-heat oven to 350 degrees.
Rinse filets under cold water and pat dry with a paper towel. Arrange filets side by side in a shallow baking dish coated with cooking spray.
Combine all the ingredients in a small bowl, using a whisk to mix ingredients well.
Spoon miso mixture evenly over the salmon.
Bake for 15 minutes, basting once more with miso mixture. Bake until fish flakes easily with a fork. You can also broil for the last 5 minutes for a crispy top (we love this!).
Top with chives if you’re feeling fancy! Serves 4.
