I can’t even wrap my head around the fact that it is the end of June or that we are celebrating the 4th of July this weekend, but here we are the last Wednesday of the month which means I’m linking up with some of my favorite bloggers for
I look forward to this post every month, but the last two months have been so hectic I just didn’t get my act together in time. So grab a cup of coffee and settle in because it’s a long one!
What We’re Eating This Week:
We are on our third week of Blue Apron Meals and so far we are all enjoying them. I’m going to post a review with more details next week, but if you are considering giving them a try I definitely would. It has made summer meal planning easier for this mama!
I also posted the recipe for my newest obsession – Brussels Sprouts last week. After dinner, my son Dylan said to me “Mom, can I eat the rest of the Brussels Sprouts?” Why yes. Yes you can. They are THAT good!
What I’m Reminiscing About:
It seems like just yesterday we were coming home from China with this little one and now she is a beautiful, funny, sassy second grader (insert ugly cry here).
What I’m Loving:
My 100% completely done, gorgeous, functional, organized kitchen! Did I mention it’s beautiful? I promise I am going to do a post in the near future with a full reveal, but for now here is a sneak peek.
What We’ve Been Up To:
We are in full summer mode and have been enjoying all our beautiful city has to offer. We had a mini staycation and went to a concert last weekend
The boys have been taking advantage of the good weather and their new boat and have been fishing almost every week.
Dani and I celebrated the last day of school with lunch, shopping and pedicures
And yesterday we headed to the San Diego County Fair for some food and fun . . ok it was mostly for the food!
What I’m Dreading:
Next month Princess Dani is having surgery and it is never fun to see your kiddos in pain. She has been through so much in her seven years and is such a trooper, but I know she is nervous and I’m not looking forward to her being in any discomfort.
What I’m Working On:
Managing everyday life of a family of 5. You would think being a stay at home mom for 5 years now, I would have this down, but keeping family and home life running smoothly AND happily is still a challenge for me (you can read more about that here). Combine this with some health issues we are dealing with for Princess Dani, a 17-year-old who is on a path to graduate high school early and possibly join the military (insert ugly cry again here), and a 22-year-old, that no matter where he is I still worry about him, and yeah, I’m just working on staying sane!
What I’m Excited About:
The simple things really. I’m excited it’s summer, I’m excited all my kids still want to spend time with us, I’m excited there are beautiful flowers on my table and I’m excited hubby has the next 4 days off with us!
What I’m Watching or Reading:
Unfortunately I have not finished reading any books this month but Dani and I are finishing up The BFG by Roald Dahl before seeing the movie with her teacher next week. We also picked up some summer reading for her from our local bookshop.
And don’t judge, but the hubby and I cannot get enough of Naked and Afraid
We are totally addicted to it! The best is when Chris turns to me and says “We could totally do that.” He’s so cute. Sorry babe but the first bug to get near my Va-jay-jay and I’d be gone!
What I’m Listening To:
We went to a Reggae concert last weekend and ever since I can’t get enough of the band Through the Roots.
Oh, and I am completely obsessed with Adele’s song “Send My Love to Your New Lover”. Like listen to it over and over obsessed.
What I’m Wearing:
A couple of weeks ago I wrote about my Fashion Favorites (you can check them out here) and at the time I had not received this top to say whether it was as cute in person as it was online, and now I can tell you – IT IS! It is such a fun top and each time I’ve worn it I’ve received numerous compliments.
What I’m Doing This Weekend:
This Friday, the hubby is taking us out on the boat. Dani is dying to fish like her big brothers and I’m not gonna lie, I just want to get some sun and then dock at a restaurant for a cocktail! Since it’s 4th of July weekend, there will probably be lots of pool time and a BBQ or two!
What I’m Looking Forward to Next Month:
More pool time, more sunshine, and a successful outcome for Dani’s surgery.

What is your favorite 4th of July Tradition and/or Recipe?
We don’t have a 4th of July tradition. Some years it’s a BBQ by the pool, some years it’s a staycation at a hotel, but every year we are together as a family. This year we’ll be at home by the pool.
As for recipes, I don’t like to spend the entire day cooking while everyone else is out having fun so this weekend I will be making these two dishes in the crock pot so I can enjoy the fun as well.
